Almonds, candied lemon peel, wild flowers, chamomile and spices are some of the notes that emerge from Philipponnat's 1995 Clos des Goisses. Layered and subtle in the glass, the 1995 is also a bit more forward than some of the other vintages in this tasting. As such, it is an excellent choice for drinking now and over the next 15-20 years or so. Stylistically, the 1995 doesn't quite have the energy or thrust of the very best years. Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
